Guelaguetza 2025: When is the tlayuda fair in Oaxaca?

As part of Guelaguetza, the most emblematic festival in Oaxaca and Mexico, the 2025 Tlayuda Fair will be held in the municipality of San Antonio de la Cal, a place distinguished for being the land that has given the state one of its greatest gastronomic treasures.

The tlayuda, in addition to being one of the main dishes of Oaxacan cuisine, generates opportunities that impact the local economy, strengthens the culture and identity of Oaxacans, and is a symbol of global flavor.

When is the Tlayuda Fair?

It will take place from July 21st to 28th. For an entire week, visitors will be able to taste the most delicious tlayudas made by the expert hands of women from the community of San Antonio.

In this 12th edition of the fair, 18 women are expected to participate in the preparation of these snacks. It will be an all-day event, as they will share their knowledge through cooking from 8:00 a.m. until 2:00 or 3:00 a.m.

The tlayudas of San Antonio de la Cal are special; their preparation requires nixtamal, which is ground directly in mills. The dough is prepared in a brazier until cooked. Once golden, a layer of lard and beans are spread over it, and quesillo is added.

These ingredients form the base of the tlayuda, followed by the addition of beef jerky, pork, chorizo, or marinated meat, accompanied by radishes, water chilies, native to the Central Valleys of Oaxaca, and an herb known as chepiche, which gives it a very distinctive flavor.

This particular fair will feature beef jerky, chorizo, ribs, cecina, tripe, and chile relleno, as well as memelas, tostadas, and other foods made with corn.

“This fair showcases our work and the efforts of all the women in the town. Thank God, none of them have been left untouched. Few continue to go to the market to offer their tlayudas. That’s why San Antonio de la Cal is the birthplace of tlayudas,” said one of the Oaxacan women participating in this fair in an interview with CORTV Noticias.
